- #71541
ingredients
1 cup diced pinneapple
1/2 cup diced mango
1 cup hulled and diced strawberries
1 tablespoon fresh grated ginger
2 tablespoons lemon juice
2 teaspoons sugar
directions
For chunky salsa, combine the diced pineapple, mango, and strawberries in a bowl. Stir in the ginger, lemon juice, and sugar. Serve at room temperature or chill until serving time.
For a smoother salsa, place all the ingredients in a blender and puree until desired consistency.
Adjust the amount of sugar as needed based on the sweetness of the fruit (riper fruit will be sweeter).

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
