Oyster Patties

ingredients
2 cups drained canned oysters, coarsely chopped
1/4 cup liquid from oysters
1/2 cup packaged dry bread crumbs
1 teaspoon salt
1/4 teaspoon black pepper
1 egg
1/8 teaspoon hot sauce
flour
1/4 cup butter or margarine
lemon wedges
directions
In medium bowl, mix oysters, liquid from oysters, bread crumbs, salt, pepper, egg, and hot sauce.
Shape mixture into patties. Coat lightly with flour.
In hot butter, in large heavy skillet, cook patties over low heat until golden-brown on both sides.
Serve with lemon wedges.

We had a lot of canned oysters on hand beause we decided not to make an oyster stuffing this year. Found this recipe as a use for them. The patties held to gether pretty well and surprisingly had enough flavor from the little seasoning involved.
