Angry Mussels

ingredients
2 pounds fresh mussels
4 cloves garlic
3 tablespoons olive oil
1/2 cup tequila
1/2 teaspoon cayenne pepper
2 pinches parsley
1 pinch sea salt
directions
You will need an outdoor grill and a heavy cast iron skillet that can be covered (the skillet that is).
Clean mussels thoroughly. Chop garlic and combine with pepper, parsley, tequila and olive oil.
Place the skillet on a very hot grill and leave there for at least ten minutes. You want the surface temperature to be extremely hot.
Once the skillet is hot, put in all the mussels and cover for three minutes. The mussels will begin to steam individually in their own liquor (thus the angry part).
With the heat still high, pour in the rest of the ingredients and cover again for about five minutes or until the garlic is tender.
Pour in a bowl, sprinkle sea salt and serve with a good crusty bread for dipping.
