Steamed Green Lipped Mussels

ingredients
1 1/2 pound green lipped mussels, de-bearded and washed
1/2 cabbage, shredded
1/2 Spanish onion, sliced
6 green chilies, roughly chopped
4 cloves garlic, roughly chopped
8 long green shallots, bottom ends
1/2 pint cherry tomatoes
1/2 cup water
palm sugar, to taste
fish sauce, to taste
1 handful long leaf mint leaves
1 cup couscous, blanched for 10 minutes
1 dash lime juice
directions
Heat a pan on the stove top. Throw in the mussels followed by the cabbage, onion, chili, garlic, shallots, cherry tomatoes and water.
Place a firm fitting lid on the pot and steam until the mussels are all open and the vegetables are soft. Discard any mussels that don't open.
Add palm sugar and fish sauce to taste. Add the mint leaves and blanched couscous. Stir through and finish with lime juice. Check the balance of flavor for hot (chili), salty (fish sauce), sour (lime juice) and sweet (palm sugar).
