ingredients

2 teaspoons unsalted butter
1 onion, chopped
1 green bell pepper, seeded and chopped
1 teaspoon curry powder
1/2 teaspoon turmeric
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 egg yolk, beaten
3 cups hot, cooked rice

directions

Melt the butter in a skillet over medium heat. Add the onion and green bell pepper and cook, stirring frequently, until the vegetables are soft.

Remove the skillet from the heat. Stir in the curry powder, turmeric, salt, pepper, cayenne pepper, and egg. Mix quickly to combine.

Stir the seasoned vegetable mixture into the hot, cooked rice. Serve immediately.

    Absolutely fantastic. I used 1/2 red bell pepper and 1/2 green bell pepper to add color. Also, I used a red onion (more flavorful). Before sauteing these ingredients, I slightly processed them. I will never have rice any other way again.

    I tried it, but I think that I messed it up. What should I do differently if I end up with a bunch of spices mixed in with crude scrambled eggs?

    • Stir the spices until blended, then stir in the egg and scramble, then continue with the recipe. That method will distribute the spices better.

    Tried this recipe and it was not only easy but absolutely delicious! You can add meat such as diced chicken or shrimp to it and make it a main dish.
