5 large potatoes, scrubbed and cut into chunks
cooking oil
salt and pepper, to taste
1 tablespoon Italian seasoning mix
1 onion, diced
directions
Preheat oven to 350 degrees F.
Place cut up potatoes and onions in a large bowl; toss to coat with salt, pepper, cooking oil and Italian seasoning.
Place in a baking dish and bake, stirring about every 15 minutes to keep from burning and sticking, until potatoes are nice and brown and fork tender.
