1 bottle (750 ml size) French cognac
9 vanilla beans
Slice the vanilla beans lengthwise and carefully split them open. Scrape the seeds into the cognac. Reseal the bottle.
Let the bottle sit in a cool, dark place for a minimum of 2 months. Several times a week, gently shake the bottle.
Strain the vanilla before using.
