1 1/2 tablespoon Morton's Tenderquick salt
1/8 teaspoon garlic powder
1 tablespoon fennel seed
1 tablespoon crushed red pepper flakes
1 teaspoon paprika
directions
Form into 4 sticks and place in refrigerator, uncovered, for 24 hours.
Bake on wire rack so grease can drip down, for 60 minutes at 300 degrees F.
