ingredients

1 pound ground pork
2 tablespoons medium hot chili powder
1 tablespoon sweet paprika
1 teaspoon cumin
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon crushed dried oregano
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground cloves
1/8 teaspoon ground black pepper
1/4 cup cider vinegar

directions

Combine dry ingredients in small bowl and mix well.

In a large bowl, sprinkle vinegar over ground pork. Mix well. Sprinkle all of dry ingredients over ground pork. Mix well, kneading mixture until dry ingredients are well combined into the ground pork. Place in an airtight container overnight in fridge to allow flavors to combine and develop.

Form into small patties and cook in frying pan using a little cooking oil of your choice, if needed.

Ground beef or ground turkey may be substituted for ground pork.

    Chorizo used to be dirt cheap to buy but now that it's become trendy in the past few years it's tripled in price at my store. I hadn't thought to make my own until I stumbled across this recipe while looking for something else. Gave it a try this weekend and it is great! I like it better than what I get at the super market. It reminds me of chorizo we had down near the Mexican border so I think this must also be rather authentic. Don't adjust any of the flavors other than the chili powder if you want to reduce the heat. You really need everything else to have the right balance.

    liked this reciepe better than store bought. I was very imppressed that it didn't have too much vinegar iin it and wasn't too sour used it in cowboy beans would be good in chili or tacos
