ingredients
5 pounds ground beef
2 teaspoons Morton's Tender-Quick curing salt
2 1/2 teaspoons ground mustard seed
2 1/2 teaspoons coarse black pepper
2 1/2 teaspoons garlic salt
1 teaspoon crushed red pepper (optional)
1 teaspoon hickory-smoked salt
directions
Combine the ground beef and remaining ingredients in a large bowl. Mix well to evenly distribute the seasonings. Cover the bowl and place in the refrigerator for 5 days. Once a day, mix the ingredients well and return to the refrigerator.
When ready to cook, preheat the oven to 140 degrees F.
Form the ground beef into logs approximately 3-inches by 10-inches. Place on a broiler pan and place in the oven. Cook at 140 degrees F for 8 hours, turning once every couple of hours or until the sausage is cooked through and hard.
Remove from the oven and let cool. Store in an airtight container in the refrigerator for up to 1 week.
