1 pound lean ground pork
1 clove garlic, minced
1 teaspoon paprika
1 teaspoon crushed dried thyme
1/2 teaspoon fennel seeds
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
Combine the pork with the remaining ingredients in a large bowl. Mix well to combine.
Shape the sausage into patties. To freeze, flash freeze the patties on a baking sheet in the freezer until solid. Place in an airtight container and freeze for up to 2 months. Thaw before cooking.
To cook, place the patties in a skillet and cook, turning once, until browned on both sides or crumble into the skillet and brown. Use as needed in recipes.
