Christmas Aspic With Avocado Dressing

ingredients
ASPIC
1 envelope unflavored gelatin
1 cup no-salt added tomato juice
1/4 cup peeled, seeded and chopped tomato
3 tablespoons seeded and finely chopped cucumber
3 tablespoons finely chopped celery
non-stick cooking spray
lettuce leaves, optional
AVOCADO DRESSING
1/2 medium avocado, peeled and chopped
2 tablespoons plain nonfat yogurt
2 tablespoons low-fat sour cream
2 teaspoons lime juice
1/4 teaspoon ground red pepper
1/8 teaspoon garlic powder
directions
For Aspic: Sprinkle gelatin over tomato juice or tomato and green chili cocktail in a non-aluminum saucepan and let stand for 1 minute. Cook over low heat, stirring until gelatin dissolves. Chill until it's the consistency of unbeaten egg white.
Add tomato, cucumber, and celery to gelatin mixture, stirring gently to combine. Spoon mixture into a 2-cup mold that has been coated with cooking spray. Cover and chill until firm.
Unmold aspic onto lettuce leaves, if desired. Top each serving with Avocado dressing.
For Avocado Dressing: Combine all ingredients in container of an electric blender or food processor. Top with cover and process until smooth. Cover and chill thoroughly.
