Josephine is Joe's vegetarian cousin. This recipe is made with crumbled veggie burgers and lots of fresh vegetables in a seasoned tomato sauce

1 tablespoon olive oil
1/4 cup finely chopped onion
1/2 cup chopped red bell pepper
2 cups chopped or ground portobello mushrooms
salt and black pepper
1 package (12 ounce size) frozen vegetarian burgers, thawed
3/4 cup tomato sauce
1 teaspoon Dijon mustard
1 pinch sugar substitute
hamburger buns
Heat the oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook, stirring frequently, for 3-5 minutes or until the vegetables are soft.
Add the mushrooms and season to taste with salt and pepper. Cook, stirring frequently, for 3-5 minutes.
Chop or crumble the vegetarian burgers and add to the skillet along with the tomato sauce, mustard, and sugar substitute. Cook, stirring occasionally, for 10 minutes or until everything is heated through.
Serve on buns.
