Vanilla Coffee Cake

ingredients
2 sticks butter, softened
1 cup sugar
3 eggs
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup sour cream
5 teaspoons vanilla extract
directions
Preheat oven 350 degrees F.
Beat butter with electric mixer for 30 seconds. Add sugar and beat until smooth. Add eggs, beat two more minutes.
In another bowl, combine flour, baking powder, baking soda and salt. Add flour mixture to butter mixture, beat until smooth. Combine sour cream and vanilla. Stir into butter mixture.
Grease and flour a 10" tube pan. Spoon mixture into pan. Bake at 350 degrees F for 50 minutes or until toothpick comes out clean. Rest in pan for 5 minutes; remove and cool on wire rack.

Very good vanilla flavor. I made a vanilla glaze to go over it too. Could easily modify this recipe to use other extracts since it makes a really nice cake and all you'd have to alter is the flavor of extract.
