ingredients
2 1/2 cups all-purpose flour
1 cup brown sugar
1 cup granulated sugar
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
2 eggs
1 cup vegetable oil
1 teaspoon vanilla extract
1 cup buttermilk
1 cup chopped pecans or walnuts, divided
1 cup flaked coconut, divided
Cream Cheese Frosting
3 ounces cream cheese, softened
1/2 teaspoon vanilla extract
1/2 box confectioners sugar
2 tablespoons butter, softened
directions
Combine flour with brown sugar, granulated sugar, salt, cinnamon, nutmeg and baking soda. Mix well.
In separate bowl, beat eggs until light and fluffy. Beat in oil, vanilla and buttermilk. Stir into dry ingredients until well blended. Add 3/4 cup each nuts and coconut.
Grease and flour a 10 inch bundt or tube pan. Pour in batter and bake at 350 degrees F for 1 hour. Remove from pan and cool on rack.
Beat cream cheese, vanilla, sugar and butter together, until of spreading consistency. Spread on cooled cake. Sprinkle with remaining nuts and coconut.

I used a different recipe for the cake itself (I made cinnamon apple coffee cake, yum!), but I used this recipe for cream cheese icing and it is FANTASTIC. It's so delicious! Best homemade cream cheese icing I have ever had, and it made enough to cover the entire cake plus left some over for me to lick off the spoon ;) Great recipe, thanks!
