The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.


3/4 cup coconut milk (not cream of coconut)
2 tablespoons tomato paste
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 medium sweet onion, thinly sliced
2 bell peppers, cut into 1-inch strips and halved crosswise
12 ounces Yukon Gold potatoes, cut into 1" pieces
4 teaspoons curry powder
2 1/4 pounds chicken drumsticks
3 tablespoons chopped fresh cilantro
Mix coconut milk, tomato paste, garlic, ginger, salt and pepper in a 6 quart slow cooker. Add onion, peppers and potatoes and mix well until vegetables are evenly coated.
Rub curry powder all over chicken. Place chicken on top of vegetables in slow cooker.
Cover and cook on high 4 to 5 hours or on low 6 to 8 hours until chicken is cooked through and vegetables are tender. Sprinkle with chopped cilantro.
