Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

If you are looking for the ultimate in comfort-food, this is it! We have made this casserole since I was little and it is still my favorite thing. We have made small adjustments to make it slightly heart-healthier like using ground turkey and low-fat cream of mushroom soup and cheese. It's amazing, cheesy, gooey, yumm-ness any way you make it!
