Frozen pot stickers save the day in this recipe. Get the flavor of pad thai without all the work by using frozen pot stickers and adding fresh ingredients and a light sauce.

1 bag (16 ounce size) frozen pot stickers
1 tablespoon olive oil
1 carrot, thinly sliced on the diagonal
1 small head napa cabbage, thinly sliced
2 tablespoons soy sauce
1/4 cup salted peanuts
Cook the pot stickers in water according to the package directions; drain.
Meanwhile, heat the oil in a large skillet over medium-high heat. Add the carrot and cabbage and toss to coat with the oil. Stir-fry for 2-3 minutes. Add the soy sauce and continue to stir fry for another 2 to 3 minutes or until vegetables are cooked to desired doneness.
Serve the vegetables topped with pot stickers and sprinkled with the peanuts.

I thought this was delicious! I used pad thai sauce instead of soy sauce and added sliced green onion.

While this wasn't a bad recipe, I had to dock it for a couple of reasons. First, it's not Pad Thai. Not even close. If you are looking for Pad Thai this isn't it - but... again, it's not a *bad* recipe. Second, the recipe doesn't specify about the pot stickers. What kind would have been helpful. More specifically, specifying ones with lots of flavor since the dish in general doesn't have much. I got a basic chicken potsticker but really should have got something with lots of spice. The overall dish was on the bland side. I did like the concept of the recipe, however. It was VERY quick and easy. I don't normally buy premade ingredients like frozen potstickers but found this to be a good save for a busy week night. Next time I'd definitely find a way to add more flavor to it.
