Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

I make this recipe OFTEN! I cook for small luncheons and dinners for many organizations and this is always a hit! IT is colorful, keeps well, and I often get asked for the recipe. Have doubled it often and one time had to make it for fifty. With the great combo of ingredients I use less expensive Mayo and often use a splash of Balsamic Vinegar, either way, by far the best cole slaw ever!
