ingredients

1/4 teaspoon black pepper
1/4 cup white vinegar
1/2 cup ketchup
1/2 teaspoon salt
1 onion, chopped
1/2 cup sugar
1 cup salad oil

directions

Combine the pepper, vinegar, ketchup, salt, onion, and sugar in a blender. Process until smooth.

With the blender running, slowly add the oil through the feed tube.

Use the salad dressing immediately or store in an airtight container in the refrigerator.

    My variations: I use apple cider vinegar. I also use shallot instead of onion, and I add 2 tablespoons of orange juice and a tiny dash of cayenne for more zip.

    This dressing turned out great. I am fed-up with commercial dressings that are full of high fructose corn syrup, canola oil, and artificial dyes. I used sugar in the raw for the sugar in this dressing, tomato paste rather than catsup, and safflower oil for the oil. Plain and simple. It turned out less sicky sweet than the store bought dressing with a great texture. I did add a few tablespoons of water to thin it out. Beautiful. It's a keeper.
