I recently tried out this copycat recipe, and I must say that it came quite close to the real deal. The sauce had a pleasant balance of tartness and sweetness, which was reminiscent of the original. I appreciated the ease of preparation and the relatively simple list of ingredients. Additionally, the fact that it can be stored for up to 2 weeks is a bonus.
However, there were a few points that left me slightly disappointed. First, I found the consistency of the sauce to be a bit on the thinner side compared to Houston's. I believe this could be due to the amount of olive oil used in the recipe. A slight reduction in oil and possibly an increase in the mayonnaise content could improve the texture.
Another minor issue I encountered was that the garlic flavor from the garlic salt was barely noticeable. I would recommend adding a bit more garlic salt or even substituting it with minced fresh garlic for a more pronounced flavor.
Lastly, although the recipe calls for letting the sauce sit in the refrigerator for 4-6 hours before serving, I found that it tasted even better after allowing it to rest overnight. This additional time allowed the flavors to meld together more effectively.
This copycat is a solid attempt at recreating the famous sauce. With some minor adjustments it could very well rival the original. I would recommend giving it a try if you're a fan of Houston's, but be prepared to make some tweaks for a more authentic experience.

I swapped out the dijon for yellow mustard and it was pretty close to Houston's. I actually prefer the dijon though so I think I'll make it that way from now on. Sorry Houston's!
