ingredients
3/4 cup vinegar
2 allspice berries
1/2 cinnamon stick
1/4 cup honey
2 tablespoons good quality mustard
3/4 cup freshly squeezed orange juice
1 cup olive oil
2 apples, peeled, cored and chopped
1/2 cup roasted pecan pieces (see note)
1/2 cup spiced rum
1 tablespoon hot pepper sauce
1 teaspoon salt
1/4 teaspoon ground cinnamon
directions
Combine vinegar, allspice berries and cinnamon in a small saucepan. Bring to scald. Remove from heat and let steep for 30 minutes.
Strain and discard spices. Combine vinegar mixture with remaining ingredients and mix well. Chill and serve over seasonal greens.
NOTE: To roast pecans, sprinkle nuts in an ungreased heavy skillet. Cook over medium heat for 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until golden brown.
Or, toast in microwave: Spread 1 cup nuts on paper plate. Cook on high 2 1/2 to 4 minutes or until heated through, stirring every 2 minutes.
