ingredients
1/2 cup brown sugar, packed
1/4 cup butter or margarine
1 tablespoon brandy or orange juice
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
non-stick cooking spray
4 bananas, peeled halved crosswise quartered lengthwise
1/4 cup pecan halves or almonds
vanilla ice cream or frozen yogurt
directions
In a saucepan, combine the brown sugar, butter, brandy and spices. Heat and stir until combined. Keep warm.
Spray an 8- x 8- x 2-inch baking dish with nonstick coating. Add bananas and pecans. Top with the spiced sauce.
Bake, uncovered, in a 350 degrees F oven 12 to 15 minutes or until heated through. Or micro-cook, covered, on 100% power (high) 3 minutes, stirring gently once. Serve warm with ice cream or frozen yogurt, if you like.
