It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Not quite chili and not quite beans and rice, this black bean stew is in a category of its own. Call it what you will, it all works great together.

2 teaspoons olive oil
1 large red onion, chopped
1 can (15 ounce size) black beans, rinsed and drained
1 can (15 ounce size) stewed tomatoes
3 tablespoons dried parsley flakes
1/2 teaspoon ground coriander
1/4 teaspoon garlic powder
4 cups cooked rice
1 1/3 tablespoon Parmesan cheese, grated
In a large skillet, heat oil, then add onion and saute until onions are transparent. Add beans and remaining ingredients except rice and Parmesan cheese. Bring to a boil.
Reduce heat and simmer for 20 minutes to allow flavors to blend. Serve over hot rice and sprinkle with Parmesan Cheese.
