Chili's Margarita Grilled Chicken

This simple copycat recipe from Chili's is made with chicken, margarita mix, and black pepper - that's it! You can either grill or pan sear the chicken.

ingredients

4 boneless, skinless chicken breast halves
1 cup margarita mix (liquid)
freshly ground black pepper, to taste

directions

Pour margarita mix over chicken breast and let marinate for 2 hours in refrigerator. When ready to prepare drain and dust with black pepper to taste.

If you do not have a grill, use a iron skillet and bring to medium high temperature. Spray an oil coating into pan and braise chicken breast until done on each side.

Place chicken breast atop of black beans and serve with a serving of your favorite Mexican rice and a generous helping of picadillo or salsa.

    This certainly was easy enough to do. Marinated chicken breasts in the margarita mix for about four hours...then tossed em on the grill. They cooked to perfection and were very moist. The flavor of limes and lemons was definitely there and not overpowering. Only complaint is it needs "something"...a kick behind it. Gonna play with this a little bit and see what I can come up with. Thanks for sharing gennyblake...

    The margarita mix didn't impart too much sweet/citrus flavor. It was about right. I think it really made a difference as a marinade though as the chicken was incredibly moist. And it's an easy recipe too!
