Easy Tuna Paella With Yellow Rice

ingredients
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 jar (16 ounce size) salsa
1 can (14 ounce size) diced tomatoes
1 can (14 ounce size) artichoke hearts, drained and quartered
1 can (14 ounce size) chicken broth
1 package (8 ounce size) uncooked yellow rice
1 can (12 ounce size) solid albacore tuna, drained and flaked
1 package (9 to 10 ounce size) frozen green peas
2 tablespoons finely chopped green onion (optional)
2 tablespoons finely chopped red bell pepper (optional)
directions
Heat oil in large nonstick skillet over medium heat. Add onion and garlic; cook and stir 5 minutes or until onion is tender.
Stir in salsa, tomatoes with liquid, artichokes, broth and rice. Bring to a boil over medium-high heat. Reduce heat to low; cover and simmer 15 minutes.
Stir in tuna and peas. Cover; cook 5 to 10 minutes or until rice is tender and tuna and peas are heated through. Sprinkle each serving with green onion and red bell pepper, if desired.
