8 chicken legs or other chicken parts
1/2 cup flour
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika

Combine flour, salt, pepper and paprika in a small shallow dish. Coat chicken pieces with the flour mixture.
In a large skillet, heat 1/4-inch corn oil over medium-high heat. Add chicken and quickly brown on all sides. Drain on paper towels. Place in slow cooker, keeping as much skin exposed as possible.
Cover and cook on low 4-5 hours or until chicken is tender and cooked through; do not add liquid.

Just had to try this recipe. Made as written and could tell within an hour that the skin had become rubbery . Gave chicken another couple of hours cooking time. Removed and refried skin side down in hot oil. I agree chicken was very moist and full of flavor.

Good basic fried chicken recipe that can be tweaked for personal preference. I coated the chicken with mustard before coating with the flour mixture. I also made half the batch with chili power and red pepper for my husband who likes anything with a heat.
