Crusty Maryland-Style Fried Chicken

ingredients
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons milk or water
1 egg, beaten
3 pounds frying chicken, cut up
1 cup oil or shortening
Cream Gravy
3 tablespoons flour
2 cups milk or half and half
salt and pepper
chopped chives or parsley, if desired
directions
In plastic bag, mix flour, salt and pepper. In medium bowl, or shallow pan, mix milk and egg. Dip chicken in egg mixture, then shake chicken a few pieces at a time in flour mixture.
In large skillet, heat oil. Add chicken and brown over medium heat. Reduce heat. Simmer covered about 30 minutes or until tender. Remove cover last 10 minutes to crisp chicken.
If gravy is desired, drain all but 3 T. drippings. Add flour to drippings. Blend over low heat until smooth and browned. Gradually add milk. Cook until mixture boils and thickens. Stir constantly. Season with salt and pepper as desired.
To serve, spoon gravy over chicken. Sprinkle with chopped chives if desired.
