Hearty Chicken Pot Pie Casserole With Biscuits

ingredients
1 tablespoon butter or margarine
1/4 cup chopped onions
1/4 cup all-purpose flour
2 teaspoons chicken bouillon granules
1/4 teaspoon black pepper
2 cups chicken broth
1 cup milk
2 cans (15 ounce size) diced potatoes
1 bag (14 ounce size) frozen vegetable blend (carrots, peas, corn, and green beans)
2 packages (7.75 ounce size) cheese and garlic biscuit mix
2 1/2 cups cubed cooked chicken
Cajun seasoning, garlic powder and onion powder to taste
directions
Heat oven to 350 degrees F.
In large pot melt butter over medium-high heat. Add onions and cook 1 to 2 minutes, stirring frequently. Stir in flour, bouillon, pepper, Cajun seasoning, garlic powder and onion powder until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and slightly thickened.
Stir in potatoes, vegetable blend and chicken. Heat to boiling, stirring occasionally. Reduce heat and simmer until vegetables are tender about 10 minutes.
Remove from heat and distribute evenly into 2 8x8 baking pans or casserole dishes. Prepare both packs of biscuit mix as directed. Drop dough by spoons onto top of casserole mixture making 3 rows of 3.
Place in preheated oven on center oven rack and bake until biscuits are light brown. About 30 minutes.

I love that this is a combo of two of my favorite dishes: chicken pot pie and chicken with biscuits. Super easy to make and feeds a lot of people. Very good flavor and I highly recommend it.
