1 package (10 ounce size) frozen peas and carrots
1/3 cup butter
1/3 cup flour
1/3 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1 3/4 cup chicken broth
2/3 cup milk
3 cups cut up cooked chicken
1 pie pastry for 9-inch two-crust pie
Rinse frozen peas and carrots in cold water to separate; drain and set aside.
Pre-heat oven to 425 degrees F.
Melt butter in 2-quart saucepan over medium heat. Stir in flour, onion, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken and peas and carrots; remove from heat.
Prepare pastry. Roll 2/3 of the pastry into a 13 inch square. Ease into ungreased square 9 X 9 pan. Pour chicken mixture into pastry-lined pan. Roll remaining pastry into 11 inch square. Cut out designs with 1 inch cookie cutter. Place square over chicken mixture. Arrange cutouts on top of pastry. Turn edges of pastry under and flute.
Bake about 35 minutes or until golden brown and chicken filling is bubbling.

Wonderful! Only thing is I use 4 pie crusts. This works awesome in my large glass baking dish. Two crusts on the bottom and two crusts on top. If you have a SAFEWAY store use their brand, the roll out pie crust,its better than any crust I have tried! LOL YUMMY! It is a recipe my incredibly picky son and husband both LOVE! Really wonderful!!!!!!!!! Thanks to the people who created it.

The only thing I changed when I made this was the mixed veggies. I had peas carrots and green bean mix in the freezer, so I used that. My daughter who is pickey loved everything but the crust, but then she doesn't like bread anyway. It came out very juicy. My husband takes the left overs for work and says it heat up pretty well in the microwave.

Yum, my family loves this. I did change it a little. I added some potatoes (cooked a little in chicken broth first) and doubled the gravy the first time and tripled it the next time, to have extra to pour over it, because we like it that way. I do think doubling it is good enough to end the problem with it being dry.

I added three chopped boiled eggs and added some diced potatoes. When I'm in a hurry, I use canned chicken. Easy, quick and very good.

I tried this recipe in need of something fast and easy...not only did i get something fast and easy but I also got delicious as well...everyone loved this recipe!
