Simon And Seafort's Prime Rib With Horseradish Relish

ingredients
4 cups coarse salt (about)
4 pounds beef prime rib roast
1 tablespoon seasoned salt
2 teaspoons black pepper
Horseradish Relish
3/4 cup shredded peeled fresh horseradish
2 tablespoons cider vinegar
1 teaspoon sugar
1/8 teaspoon salt
directions
Preheat oven to 225 degrees F. Fill large roasting pan with enough coarse salt to come 1/4" up sides of pan.
Sprinkle meat with seasoned salt and pepper. Arrange roast bone side down on top of salt. Cover with more coarse salt. Bake until thermometer inserted in center registers 120 degrees F for medium rare, about 2 1/2 hours.
Remove pan from oven. Let roast stand 30 minutes. Using back of spoon, break salt crust and remove from roast. Cut beef between ribs. Divide beef among plates and serve with horseradish relish.
For Horseradish Relish: Mix all ingredients in small bowl. Cover and let stand 2 hours before serving.
