Grilled Prime Rib With Jumbo Asparagus

ingredients
2 slices prime rib, cut 3/4-inch thick
4 tablespoons olive oil
1 tablespoon lemon juice, more if needed
1/8 teaspoon salt
1/4 teaspoon ground black pepper
8 stalks jumbo asparagus
1 teaspoon lemon pepper
2 teaspoons minced fresh thyme
2 teaspoons minced fresh sage
1 small tomato, halved
1 lemon, zested
directions
Combine olive oil, lemon juice, salt and pepper in a medium bowl, store in a cool place. Steam the jumbo asparagus, let cool.
Season prime rib with lemon pepper, thyme and sage; grill to appropriate doneness. Place the asparagus on a plate with prime rib and tomato; drizzle the oil over top. Garnish with lemon zest.
