Beef Brisket and Sauerkraut

4 pounds brisket
hot water
1 tablespoon salt
1 quart sauerkraut
1/4 teaspoon black pepper
1 cup vinegar, mild
3 tablespoons brown sugar
1 medium potato, grated
1 teaspoon caraway seed
directions
Cover brisket with water; season. Simmer for 1 hour to 1 1/2 hours.
Add sauerkraut, vinegar and brown sugar. Cook 1 hour longer. Add potato and caraway seed. Cook 10 minutes longer.
