Rice Stuffed Flounder

ingredients
1 onion, chopped
1 cup mushrooms, sliced
1 tablespoon margarine
1 cup chicken broth
1/2 cup half and half
1 teaspoon dill weed
1 1/2 cup instant or cooked rice
3/4 cup carrot, grated
3/4 cup zucchini, grated
4 flounder fillets (4 ounce size)
salt to taste
pepper to taste
paprika to taste
directions
Heat oven to 350 degrees F.
Brown onion and mushrooms in margarine. Mix broth, half-and-half and dill weed and add to pan. Bring to a boil and add rice.
Return to a boil, then reduce heat and cover. Simmer for 5 minutes. Remove from heat, add carrot and zucchini and let stand for 5 minutes.
Stuff fish with mixture and sprinkle with salt, pepper and paprika. Bake for 15 to 20 minutes.
