3 tablespoons chopped fresh cilantro
2 cloves garlic, minced
2 limes, juiced
1/2 cup orange juice
2 ounces tequila
1/2 teaspoon ground cumin
1/2 teaspoon ground chili powder
1 pound fresh fish fillets (mahi mahi, cod, tilapia, or other white fish)
1/4 cup diced red onion
8 medium flour tortillas, warmed
2 cups shredded romaine or iceberg lettuce
1 cup shredded Jack cheese
1 ripe avocado, diced
1 cup diced fresh tomato

directions

Combine the cilantro, garlic, lime juice, orange juice, tequila, cumin, and chili powder in a shallow dish or zip-top plastic bag and mix well. Add the fish fillets and turn to coat them in the marinade. Place the fish in the refrigerator for 30 minutes to marinate.

Preheat a grill, skillet over medium-high heat, or the oven broiler.

Remove the fish from the marinade and discard any remaining marinade.

If grilling, grease the grill then grill the fish until it flakes easily with a fork. If using a skillet, add a small amount of oil to the skillet and cook, turning as needed, until the fish is cooked. If using the broiler. Lightly grease a broiler pan. Place the fish on the pan in an even layer and broil until flakey and tender. The fish should take about 3-5 minutes per side, depending on the type of fish and thickness of the fillets.

Break the fish up into bite-sized pieces. Divide between the warmed tortillas. Top the fish with the shredded lettuce, grated cheese, avocado, and tomato. Serve immediately with salsa on the side.

    I've tried lots of fish taco recipes but this is one of my favorites. It's really easy to cook and has lots of fresh ingredients (I also like that it's not fried so it's a bit healthier). I add a sriracha mayo drizzle to each taco too. Yumm!

    Love it! I've made this several times for my family and it's now one of our favorites. Often I don't have any orange juice, or tequila, but it still works well. I also make some mayo/lime/sourcream/cilantro 'dip' to accompany it all. YUMMMM.

    These were easy to make and VERY tasty! I added a little extra cilantro (there can never be too much) and grilled the pollock ~ yum! Can't wait to make these again ~ makes my mouth water!!
