Basic Sausage Bolognese

ingredients
1/4 pound mushrooms, sliced
1 carrot, sliced
1 clove garlic, crushed
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
2 tablespoons olive oil
3/4 pound Italian sausage, casings removed (can also use ground beef, regular sausage, ground turkey, or ground chicken)
2 cans (6 ounce size) tomato paste
3 cups water
1/4 cup dry red wine (optional)
1 teaspoon sugar
1/4 teaspoon Italian herb seasoning
directions
Saute mushrooms, carrot, garlic, onion, green pepper, and celery in hot oil in large saucepan or dutch oven.
Add sausage (or your choice of meats) and cook until meat is no longer pink. Drain fat. Add remaining ingredients. Simmer uncovered 30 to 40 minutes.
Serve over hot pasta, sprinkled with parmesan cheese.
