ingredients
1 1/4 cup Monterey Jack cheese, grated
3/4 cup Cheddar cheese, grated
1 deep dish (9 ") frozen pie shell
1 can (4 ounce size) diced green chiles
1 cup half and half
3 eggs, beaten lightly
1/2 teaspoon salt
1/8 teaspoon cumin
directions
Spread Monterey Jack cheese and half of the cheddar over the bottom of the pie shell. Sprinkle diced chiles over cheese.
Stir together in a bowl the half and half, eggs and seasoning. Pour carefully into pie shell. Sprinkle with remaining cheese.
Recipe can be frozen at this point if desired: Cover pie with foil and put in freezer.
To bake: if frozen, remove foil and thaw. Bake uncovered at 325 degrees F for 40-50 minutes. Serve immediately.

I have been making this recipe for years for special occasions. My husband and boys absolutely love it! I have also served it at brunches to rave reviews. It is great as is, but my family does like black olive slices on top. I have had to add about 10 minutes to the cook time, but it is possible that it is just my oven. Be sure to let it sit before slicing to give it time to set up. This is one of our very favorites!
