Vegan chocolate cheesecake is a delicious dessert that everyone can enjoy, not just vegans. The filling is light and creamy and you won't even know it is made from tofu.

ingredients

1 block (16 ounce size) soft tofu, drained
4 tablespoons cocoa powder
1 teaspoon vanilla extract
1/2 cup sugar
2/3 cup chocolate soy milk
1 prepared graham cracker crust

directions

Preheat the oven to 375 degrees F.

Place the tofu in a large mixing bowl with the cocoa powder, vanilla extract, and sugar. Beat on medium speed with an electric mixer until well combined. With the mixer running, slowly add the soy milk until combined.

The filling can be prepared up to this point and be refrigerated for up to 12 hours.

Pour the chocolate filling into the graham cracker crust. Place the cheesecake in the oven and bake at 375 degrees F for 25-35 minutes, or until the cheesecake is set.

Turn off the oven and let the cheesecake cool in the oven for 10 minutes then remove to a wire rack. Let cool completely then refrigerate for 1-2 hours to chill before serving.

    I didn't have chocolate soy milk, so I used cashew milk and added 1 tbsp of cocoa... it worked! My husband liked it too, so that's a winner! Thanks!

    Wow, this was a great hit at the office. I wanted to take something easy and healthy and chocolate and this was a huge hit. No one at my office is Vegan except my husband and myself and our son. Everyone else just turns their noses up at the food we eat, so I wanted to make something that would pull them in to the possibility of trying more things vegan. This was the perfect recipe. I even got asked by one of my co-workers to make this for her little girls birthday party for the kids. I made them using Keebler individual graham cracker pie shells and they cooked perfectly and served perfectly. Thanks for a great recipe that non one could believe was vegan. I love when that happens.
