Upside-Down Orange-Raisin Muffins

ingredients
1/4 cup chopped raisins
1 tablespoon sugar
1/2 teaspoon ground cinnamon
1/2 cup chopped nuts
1/3 cup packed brown sugar
2 tablespoons butter, melted
2 tablespoons honey
1/4 teaspoon ground cinnamon
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 egg
2/3 cup milk
1/4 cup honey
1/3 cup butter, melted
2 tablespoons grated orange peel
directions
Grease a 12 cup muffin tin.
Combine the raisins, sugar and cinnamon; set aside while preparing remaining ingredients.
Combine the chopped nuts, brown sugar, melted butter, honey and cinnamon. Spoon 1 teaspoonful into the bottom of each muffin cup.
In a large bowl, combine the flour, baking powder and salt. In a small bowl, combine the egg, milk, honey, melted butter and orange peel. Slowly add the egg mixture to the flour mixture, stirring until just blended.
Spoon 1 spoonful of batter into the muffin cups, top with some of the raisin mixture then top with remaining batter.
Bake at 375 degrees F for 17-20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Cool muffins for 5-7 minutes, then invert pan onto waxed paper or a baking sheet. Scrape any the caramel mixture from the bottom of the muffin cups onto the muffins while still hot.
