Apple Butterscotch Muffins

ingredients
3 cups self rising flour
1/4 cup sugar
2 eggs, beaten
1 1/2 cup milk
1/3 cup oil
6 ounces butterscotch chips
1 cup apples, peeled and diced
directions
Combine self rising flour and sugar in large bowl. In a small bowl combine the eggs, milk, and oil. Stir into flour mixture. Stir in butterscotch chips and apples until just mixed. Do not overstir.
Grease muffin cups and fill 2/3 full with batter. Bake at 425 degrees F for 20-25 minutes or until tops are golden brown.
