Rum Raisin Fudge

ingredients
2 cups sugar
1/2 cup sour cream
1/4 cup butter
12 ounces white chocolate, chopped
7 ounces marshmallow creme
1/2 cup raisins
1 teaspoon rum extract
directions
Combine sugar, sour cream and butter in a saucepan. Bring to a rolling boil over medium heat, stirring constantly. Boil for 5 minutes, stirring constantly, until mixture registers 236 degrees F on a candy thermometer. 
 Remove pan from heat and stir in white chocolate, marshmallow, raisins and rum extract. Beat vigorously for several minutes, until fudge begins to thicken. 
 Pour into a greased, 8-inch-square pan. Cool, then cut into squares.

I made this recipe today at lunch time. I figured an hour was plenty of time. Turns out that fifteen minutes was plenty of time. I substituted almond extract for the rum. It's wonderful. The recipe came together fast and was at 236 much quicker than I expected. It may be the new stove. I love the taste and my daughter does, too. I eyeballed the Fluff and put in about a cup. This is a great recipe that I'm sure I'll be doing again.
