Coconut Marshmallow Fudge

- #9778
30-60 minutes
ingredients
3 cups sugar
2/3 cup evaporated milk
3/4 cup butter
1 package (12 ounce size) white chocolate chips
4 cups miniature marshmallows
1 teaspoon vanilla extract
2/3 teaspoon coconut extract
1 2/3 cup packed Angel Flake coconut
directions
Use a large 3+ quart pan and stir together the butter, evaporated milk, and sugar. Stir over medium heat until they come to a full, rolling boil. Boil 5 minutes while stirring. Remove from heat.
Stir in white chips and miniature marshmallows until about half melted. Add vanilla and coconut flavoring.
Continue stirring until chips/marshmallows melted and starting to set up.
Stir in coconut.
Turn out into a buttered 10 x 15 pan. Cut when nearly cooled. You have to kind of work rapidly as this is a standard marshmallow creme recipe with modifications. I broke both arms last year and can't beat in the marshmallow creme but the miniature marshmallows are small enough I can beat them in.
