For a quick and cheesy dinner, try these cheesesteak sandwiches. Velveeta joins forces with tender roast beef and sauteed onions for a sandwich that's anything but boring.
1/2 pound Velveeta cheese, cubed
1/4 cup milk
1 tablespoon Dijon mustard
2 tablespoons butter
1/2 cup sliced onion
1/2 cup sliced bell peppers
1 pound thin roast beef slices
6 sandwich rolls, or hoagie style rolls, split
Combine the Velveeta, milk, and mustard in a saucepan over low heat. Cook, stirring occasionally, until the cheese is melted and the sauce is smooth.
Meanwhile, melt the butter in a skillet over medium heat. Add the onion and bell pepper. Cook for 4-5 minutes or until soft. Add the roast beef. Cook, stirring gently, until the roast beef is heated.
Divide the beef between the sandwich rolls. Top with cheese sauce and serve immediately.

Who cares if it's not a real philly cheesesteak, it's still a GOOD cheesesteak (you know, they aren't only eaten in Philly, right?). I liked this and will happily make it again. The cheese sauce was very creamy. The only diff I did was use chopped white onion instead of green onion.

Being a proud Philadelphian myself this is not a cheesesteak it's a sacralige!! First of all you use sliced cheese not cubed! You do not use milk, butter or green onion!! You use regular mustard, regular onion, and no milk or butter as i stated before!! Also you don't use roast beef!! You use paper thin sirloin!! You must change this recippie!!
