It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

ingredients
Salad
1 can (15 ounce size) butter beans
1 can (15 ounce size) kidney beans
1 can (15 ounce size) garbanzo beans
1 can (15 ounce size) green beans
1 can (15 ounce size) wax beans
1 small red onion, diced
1 green bell pepper, chopped
Dressing
1/4 cup water
2 tablespoons sugar
1/2 cup balsamic vinegar
1/4 cup oil
1 teaspoon fresh oregano
1/2 teaspoon garlic, minced
directions
Salad: Empty all the beans into a colander in the sink or over a bowl. Rinse well with cool water then drain well.
Transfer the drained beans to a large bowl or container with lid.
Stir the onion and bell pepper into the beans.
Dressing: Combine the sugar and water in a microwave safe measuring cup or bowl. Microwave on high for 1 minute.
Remove from microwave and whisk in the vinegar, oil, oregano, and garlic until combined.
Pour the dressing over the beans and toss to coat. Cover and allow to marinate in the refrigerator for 4 or more hours.
Serve chilled or at room temperature.
