ingredients
1 pound stew meat
4 potatoes peeled and cut into cubes
1 can (16 ounce size) tomato sauce
1 teaspoon cumin powder
2 cloves garlic (minced)
1/4 cup oil
enough water to cover ingredients
2 teaspoons cilantro
salt, to taste
black pepper, to taste
directions
Brown the meat in oil in a dutch oven or large pan. While meat is browning, in a bowl mix tomato sauce, cumin, garlic, and cilantro.
When the meat is brown, add potatoes and cook for 5 minutes, stirring frequently. Add the tomato mixture and enough water to cover all the ingredients, and cook til potatoes are transparent.
cook's notes
For a tastier stew, simmer the browned meat with tomato mixture and about 2 cups of water for about 30 - 45 minutes, then add the rest of the ingredients and cook til potatoes are done. You can also add a can of green beans or peas towards the end of the cooking time.
This is a stew that tastes good with French bread.

Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
