ingredients
2 pounds stew meat, all visible fat removed
4 large potatoes, peeled and cut in 2" chunks
4 large carrots, peeled and cut in 2" chunks
3 onions, sliced
4 stalks celery, cut in 2" chunks
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon black pepper
2 cups V-8 vegetable juice
2 tablespoons minute tapioca
directions
Heat oven to 300 degrees F. Line a roasting pan with meat and vegetables.
Mix juice with salt, pepper, sugar and tapioca and pour into pan. Cover with foil and bake for 4 to 4-1/2 hours.
