ingredients
1 tablespoon olive oil
1 1/2 pound stew beef, cut in bite-sized pieces
1 cup chunky salsa
2 tablespoons packed brown sugar
1 tablespoon reduced-sodium soy sauce
1 clove garlic, minced
1/3 cup chopped fresh cilantro
2 tablespoons fresh lime juice
2 cups hot cooked rice
directions
Heat the oil in a Dutch oven over medium heat. Add the beef and cook, stirring occasionally, until the meat is browned. Pour off any excess grease.
Stir in the salsa, brown sugar, soy sauce, and garlic. Cook, stirring, until the mixture comes to a boil.
Reduce the heat to a low simmer and cover the pot. Let simmer for 1 3/4-2 hours or until the beef is tender.
Turn off the heat and stir in the cilantro and lime juice. Serve the beef over hot cooked rice.
