This beef ranchero is easy to whip up in a crockpot with onion, cheddar cheese, and tomato with green chiles.

1 1/2 pound beef chuck or stew meat, cut in cubes
1 cup chopped onions
2 cloves garlic, minced
1 teaspoon salt
1 can tomatoes with green chiles
1 1/2 cup beef broth
1 cup cubed Cheddar cheese
3 cups hot cooked rice
For Crockpot: Throw everything but the cheese and rice in a crockpot and cook on low 8-10 hours. Fold in cheese just before serving. Serve over rice.
For Stovetop: Brown beef in a little oil (about 5 minutes). Add onions and continue cooking until meat is brown and onions are soft. Add garlic, salt, tomatoes and green chilies and broth.
Simmer, covered, for an hour (or until meat is tender). Fold in cheese and serve over rice.

Very good, I make in the crock pot, add a little chili powder and I thicken with a little cornstarch at the end. One of my favorite recipes.
