Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.


These sugar cookies use powdered sugar rather than granulated in the dough. The dough is chilled, rolled out, cut with your favorite Valentine's Day cookie cutters, and sprinkled with red decorator's sugar before baking.
1 cup butter or margarine, softened
1 1/2 cup powdered sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1 teaspoon almond extract
2 1/2 cups all-purpose flour
red or pink decorator's sugar, optional
Combine the butter and powdered sugar in a mixing bowl. Beat on medium speed until well creamed.
Add the egg, vanilla, and almond extract and mix for 1 minute. With the mixer running, add the flour in 1/2 cup increments, mixing well after each addition.
Wrap the cookie dough in plastic wrap and chill for 1-4 hours (or overnight).
Preheat the oven to 375 degrees F.
Roll the dough out to a 1/4-inch thickness on a lightly floured work surface. Cut with heart-shaped cookie cutters (2-3 inch size) and place the cookies on an ungreased baking sheet. Sprinkle the cookies with decorator's sugar, if desired.
Place the cookies in the oven and bake at 375 degrees F for 8-10 minutes, or until they are just beginning to brown around the edges.
Remove the baking sheet from the oven and let the cookies cool for 1 minute, then transfer them to a wire rack to cool completely. Store the cooled cookies in an airtight container.

These are pretty good. A nice departure from granulated sugar. They are light and crispy, much like Cream Cheese Sugar Cookies. Just make sure to refrigerate several hours (overnight is best) and work with half the dough at a time since it will get sticky!
