Eggplant Spaghetti Sauce - CDKitchen.com

ingredients

1 pound eggplant
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 ounce size) Italian seasoned stewed tomatoes
1 can (6 ounce size) tomato paste
1 can (4 ounce size) mushroom pieces, undrained
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon Italian seasoning, or to taste
1 1/2 teaspoon salt
1 teaspoon sugar

directions

Peel the eggplant and chop into 1-inch cubes. Add to the crockpot along with the remaining ingredients.

Cover the crock pot and cook on high for 2-4 hours or until the vegetables are heated through.

Stir well before serving over cooked pasta. Adjust seasoning as needed.
